Matcha Strawberry Tart

Savor springtime with these luscious strawberry and matcha tarts: with a rich matcha pastry cream filling and ripe fresh berries, it’s a unique combination your tastebuds will adore!

My love for matcha is more than a spring fling, and this tart is no exception. The natural sweetness of the strawberries is the perfect contrast for the grassy bitterness of the matcha.

“I think we might go to the Clarksville place and pickup strawberries in just a bit. Want some?”

More exciting words have rarely been spoken. Or texted, in this case, by my friend Phillip on Friday afternoon.

Normally this time of year we’d have already made at least one trip out to one of the U-Pick strawberry farms within a 45 minute drive of Nashville, where we’d fill our buckets with more berries than two people could feasibly eat before they went soft. Some would be undoubtedly eaten straight from the fields, and more than a couple snuck from the tupperware container on the drive home. Some we’d freeze, a couple pounds would invariably make their way into some kind of jam. And the rest… well, I usually had some sort of springy strawberry concoction up my sleeve. From fresh strawberry pie to chocolate strawberry ice cream, strawberry blondies and even strawberry-topped guacamole, if you scroll back through the archives you’ll surely notice a few new strawberry recipes pop up each and every May.

But this year has been different for many reasons. So Phillip’s text took me off-guard, and I hadn’t had time to plan and scheme about what exactly I would do with all those berries. Although that didn’t stop be from replying that I’d take a gallon! without a second thought.

When he dropped off the flat of beautiful, glossy berries (seriously though, I’m not sure if I’ve ever seen such pretty strawberries), I spent some time photographing them (as you do with pretty fruit)… but beyond that, I was stymied. Stumped. At a complete loss.

Overhead rectangle of ripe red strawberries on a marble background.

I know I’ve been a bit quieter here than usual, my 2-post-a-week streak long since broken, so I knew I had to put these berries to use in a way that would be worthy of a blog post. And that pressure, well, it paralyzed me. I simply couldn’t decide what to make, and the clock was ticking (unlike the white and crispy grocery store berries engineered for storage and transport, these local berries were picked at the peak of perfection, but that perfection doesn’t last long).

I wanted a recipe that was interesting, not the same basic cake or tart that’s been done before. But I also didn’t want something too complex, something that I’d have to test 2, 3 or 4 times to get it right, and also since I know we’re all taking fewer trips to the grocery store these days, and ingredients aren’t quite as easy to acquire. (Case in point: I didn’t even have a drop of heavy cream, which ruled out pretty much any sort of shortcake-take. On the plus side, I guess that cut down infinite possible choices to a less staggering number.)

Ultimately, after much hemming and hawing, I decided on a simple strawberry tart, one that would shine a spotlight on the beauty of the ruby red berries in their freshest form.

But, if you know me, you know I can’t leave well enough alone, and so a plain strawberry tart was out of the question. Most recipes call for a base of pastry cream that is then topped with a starburst or swirl of fresh sliced strawberries, and that pastry cream base was ripe (no pun intended… ok, maybe a little intended) for adaptation.

My choices having being limited even further, I now debated between almond pastry cream, or something slightly wackier, a vibrant green from either matcha or pistachio (you know how much I adore both of these ingredients).

Matcha ultimately won the day.

Here’s how to make the absolute best grilled salmon! It’s perfectly tender and flavored with a magic seasoning blend that takes it to new heights.

Grilled salmon

Want to grill salmon to perfection? It’s not an easy feat. Salmon is easy to over cook and under-season. Over here we’ve had our share of sub-par salmon experiences, so we set about to find a no-fail way to grill salmon. Meet our Perfect Grilled Salmon! It’s an easy method and comes out tender with a lightly crisp crust. Even better, we created a tasty magical seasoning blend to go with it. This Seafood Seasoning tastes so good, you’ll want to put it on everything…you might never make salmon without it again.

Ingredients for grilled salmon

Let’s break down the ingredients for grilled salmon, shall we? You only need a few quality ingredients to make the very best grilled salmon:

  • Skin-on salmon fillets: Try to find wild-caught if you can: it tastes better and is most sustainable. Skin on is important because it acts as a barrier between the fish and the grill while cooking.
  • Olive oil & salt: You’ll just need a bit for rubbing and sprinkling.
  • Seafood seasoning: Here’s where the magic comes in. Keep reading…

Tips for how to grill salmon: the easy way!

Some people swear by cooking grilled salmon in foil. But we think the very best way is right on the oven grates. This way, you get all that smoky flavor and a crispy exterior. Here are our tips for how to grill salmon:

  • Brine the salmon first! Brining is simply placing the salmon in a salt water solution while the grill preheats. It makes for perfectly moist salmon, and also helps the salmon come to room temperature which makes it cook more evenly.
  • The temperature for grilled salmon? Medium high heat, or 375 to 450 degrees. Medium high heat makes for a perfectly cooked piece of salmon. While you can cook at high heat and then finish at lower heat, we like the ease of grilling at one temperature.
  • How long to cook grilled salmon? 5 minutes skin side down, then 2 minutes skin side up! The best way to measure whether it’s done is using an internal thermometer. Stick it in the thickest part of the fish and it should read 125 to 130 degrees Fahrenheit.

Ways to prevent sticking to the grill!

Some people complain about salmon sticking to the grill. The biggest contributor to that problem? Don’t try to turn it too soon! When the salmon is cooked just enough, it releases from the grill grates, making it easy to flip. But if you touch it before that time, it can stick and break apart. You don’t need to oil the grill grates. Just lightly oil the fish, and when cooking wait until the salmon is easy to release (about 5 minutes). Then it’s easy to flip!

Another tip: make sure to cook with skin on salmon. This helps it to stay together on the grill. Salmon with the skin off easily sticks to the grill. We don’t recommend using it here.

Here’s how to make the absolute best grilled salmon! It’s perfectly tender and flavored with a magic seasoning blend that takes it to new heights.

Ingredients

  • 4 4-ounce salmon fillets, skin on (wild caught if possible)
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 2 tablespoons Seafood Seasoning*

Instructions

  1. Preheat a grill to medium-high heat (375 to 450 degrees).
  2. Brine the salmon: While the grill preheats, in a shallow dish mix together 4 cups room temperature water and 3 tablespoons kosher salt. Place the salmon in the water and wait for 15 minutes (this should be about the time it takes to preheat).
  3. Pat the salmon dry with a clean towel. Rub it generously with oil and sprinkle it with the kosher salt and seasoning blend (or simply salt and pepper).
  4. Grill the salmon over indirect heat skin side down for 5 minutes, until it releases from the grates. Flip and cook another 2 minutes, until the internal temperature is 125 to 130 degrees. Allow to rest for a few minutes, then serve.

Notes

*We highly recommend making this homemade seafood seasoning! To make a quick version just for the salmon, mix 2 teaspoons smoked paprika, 2 teaspoons garlic powder, 1 teaspoon onion powder, 1/4 teaspoon kosher salt and 1/4 teaspoon cumin.

Grilled Apples a La Mode

Grilled apples make the best summer dessert! Grill them with sugar and spices until tender, then serve them with “a la mode” with melty vanilla ice cream.

Grilled apples

Here’s one of the best desserts out there: grilled apples! It’s carefree, easy, and a la mode (which makes everything better). Thinly slice those apples and throw them in a foil packet with sugar and spices. The grill turns them tender and velvety, with subtle nuance of smoke. Top with melty vanilla ice cream, and well: it doesn’t get any better than this! It’s easy to make up a packet and cook it while prepping the rest of a grilled dinner. When you’re ready for dessert: pop open the packet and get out some forks!

Ingredients for grilled apples

Grilled apples don’t need much to taste incredible: just sugar and spices! These apples are just sweet enough, because they’re designed to be covered in melty ice cream. Here’s what you need to make grilled apples:

  • Apples: The best grilled apples are good baking apples: firm tart-sweet varieties like Honey Crisp, Jonathon, Granny Smith, Gala, Fuji, etc
  • Brown sugar and white sugar: Or substitute any type of sugar you like (coconut sugar, etc).
  • Cinnamon
  • Ginger
  • Nutmeg
  • Vanilla ice cream: This adds the final bit of sweetness. If you want to omit, add a touch more sugar to the apples if you like.

How to cut apples…the fast way!

For these grilled apples, you’ll need to cut them into 1/4-inch slices. You can leave the peel on (we did!), or remove it if you prefer desserts with peeled apples. Somehow, we only recently learned how to cut apples the fast way. Here’s the trick of how to quickly thinly slice apples: check out the video below!

  1. Holding the core of the apple, use a large chef’s knife to slice off four sides of the apple, cutting as close to the core as possible.
  2. Take one of the quarters and place it flat side down on the cutting board. Then cut it into thin slices.
  3. Repeat with the remaining quarters!

Tips on how to grill apples

Apples are easiest to grill in a foil packet. You’ll just need to know a few basic items: grill temperature and approximate timing. Memorize that and then make them on repeat all summer! Here’s what you need to know (or jump right to the recipe):

  • Preheat a grill to medium high heat: that’s 375 to 450 degrees Fahrenheit.
  • Cut the apples into thin slices. See the video above!
  • Place them on foil and season with sugar and spices. Then add another sheet of foil on top, seal it, and poke holes for air to escape.
  • Grill over indirect heat for 20 to 25 minutes, until the apples are tender. Serve with ice cream or whipped cream! We like eating it right out of the packet.

More topping ideas!

What else can you use to top grilled apples? So many things. Take this to over-the-top grilled dessert status by adding any of the following:

  1. Substitute ice cream for homemade whipped cream (or vegan whipped cream).
  2. Try bourbon-infused whipped cream. (Yes!)
  3. Drizzle with caramel sauce.
  4. Sprinkle with maple pecan granola crumbles.
  5. Add toasted almonds.
  6. Top with glazed pecans or glazed walnuts.
  7. Drizzle with balsamic reduction.
  8. Top with a buttered rum sauce.
  9. Add sprinkles (why not?).
  10. Drizzle with a vanilla cream sauce.

Love grilled desserts? Also try our Grilled Pineapple: it also works a la mode! It’s great with some of the toppings above, and especially tasty with toasted coconut and fresh mint.

Perfect Grilled Potatoes

Here’s how to make the best grilled potatoes! These wedges are crispy on the outside and tender on the inside: the ideal summer side dish.

Grilled potatoes

Out of all the vegetables imaginable: potatoes somehow always steal the show. Meet these perfect grilled potatoes! These little wedges are just how you’d want them: crisp on the outside and tender on the inside. They’re like the French fries of grilled vegetables, really. The outsides are just salty enough, seasoned with Old Bay to give them a hint of celery salt and paprika. Serve them with a dipping sauce and it’s hard to tear yourself away from the platter! (At least, it was for us.) Potatoes are a little tricky on the grill…here’s what you need to do to get them just right.

The secret to grilled potatoes: parboiling!

An experienced grill master knows: some vegetables you can’t just throw on the grill. Harder veggies like cauliflower and potatoes need a little TLC before you pop them on the grill. The secret: parboiling. What’s parboiling? Parboiling is partially boiling food before you cook it using another method. You don’t want to boil the potatoes fully, just enough so they’re just starting to become tender.

Why do you have to parboil potatoes before grilling them? We get it, it’s an extra step. Skip parboiling and the potatoes turn out charred on the outside and hard on the inside. It’s any great grillmaster’s worst nightmare! In our opinion, at least.

Grilled potatoes

Ingredients for grilled red potatoes

The great thing about this grilled red potatoes recipe? You hardly need any ingredients to make a stand-out side dish. Here’s what you’ll need:

  • Medium sized red potatoes The size here is key! You’ll want the potatoes to be not so small that they’ll fall through the grates, but not so large that the wedges are long and hard to eat.
  • Olive oil
  • Old Bay (more on that below!)
  • Salt
Grilled potatoes

Easy to scale up! Just mind your grill space.

This grilled potatoes recipe calls for 1 pound of red potatoes. This makes enough for about 3 to 4 modest servings of potatoes. But let’s be honest: these disappear very quickly!

Multiply these quantities by 1.5 or 2 to make a more hefty portion of grilled potatoes. Just note that you’ll have to manage your grill space accordingly. Depending on the size of your grill, 2 pounds of potatoes could take up the entire grill space. If you’re making other grilled vegetables or a grilled main dish at the same time, you may have to cook things in batches.

How to grill potatoes (basic steps)

All you need to know about how to grill potatoes is the trick: parboiling! Once you’ve mastered that, you’ll just need the grill temp and approximate temp and you’re ready to go. Here are the basic steps (or jump to the recipe below):

  • Preheat a grill to medium high heat. That’s 375 to 450 degrees Fahrenheit, the temperature for most grilled vegetables.
  • Cut the potatoes into wedges and parboil about 5 minutes. Boil until they’re just able to be pierced with a knife, but still firm and hold their shape. The grill will do the rest!
  • Grill on the grates for about 3 to 4 minutes per side. Keep the straight edge on the grill and flip them right over!

Old Bay & a few alternatives!

Old Bay is an American seasoning blend that’s often used to season seafood, most notably in shrimp boils or chowders. If you live in the US, you’ll know it from its signature red and yellow can! The main ingredients are paprika, celery salt, black pepper, and crushed red pepper flakes. It truly makes anything you sprinkle it on taste irresistible. Here’s how to get ahold of it:

  • Buy it: You can find Old Bay in your grocery store in the spices aisle, or buy Old Bay online.
  • Make it: It’s close to the real thing! Try this homemade Old Bay seasoning.
  • Substitute: Old Bay contains salt! If you’re not using it, increase the salt and use garlic powder and paprika (exact quantities are in the recipe below).
  • Mix it up! Use other seasoning blends to mix it up! Our top seasoning recommendations are Taco, Fajita, Cajun, Blackened, Seafood (not just for fish!), and Greek.

  1. Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit).
  2. Heat a pot of boiling water. Cut the potatoes into wedges. Boil until they can just be pierced with a paring knife but still feel firm and hold their shape, about 5 minutes. Place them in a strainer and wait until the steam stops.
  3. In a bowl, gently toss the potatoes with the olive oil, Old Bay seasoning, and kosher salt.
  4. Place the potato wedges directly on the grates and cook for 3 to 4 minutes per side (or 6 to 8 minutes) until browned, turning once. Note that when you turn the potatoes, the easiest way is to keep the straight edge on the grill and flip them to the other side. Remove from the grill. Garnish with chopped cilantro or Italian parsley if desired.

*Makes 3 to 4 modest portions: it’s easy to 1.5 times or double! You’ll just need to manage grill space.

**If you don’t have Old Bay, use 1/2 teaspoon garlic powder and 1/4 teaspoon paprika, and increase the salt by 1/4 teaspoon. You can also use any of our seasoning blends (just keep in mind whether they contain salt and adjust accordingly).
