Here’s one of our favorite side dishes that’s packed with flavor and fits almost any diet: Cucumber Salad! It’s simple and punchy, with a vinegar-based dressing that packs in tangy, sweet and salty flavor. It’s ideal for just about anytime: summer cookouts or pitch-ins, lunches, or an easy make-ahead side dish you can keep in the fridge for dinners all week. This is one of our favorite because it’s so simple and packed with flavor (plus we both love pickles so it checks that box!).

This cucumber salad recipe is actually more like quick-pickled cucumbers and onions than a salad (similar to this German Gurkensalat). While we love a creamy cucumber salad, the vinegar-based cucumber salad is our preference. It’s so easy, holds up well over time, and has incredible flavor. Here are the ingredients you’ll need:

  • English cucumbers: look for the long, thin English cucumbers that come plastic-wrapped in the grocery store.
  • White onion and red onion: or just use one type of onion. We like using both to get the bright color of red and the mild flavor of white.
  • Fresh dill: it’s best with fresh herbs, but you can substitute dried dill here and it’s still fantastic.
  • White vinegar: make sure it’s not white wine vinegar! This is straight white vinegar, which has a piercing straightforward flavor.
  • Granulated sugar: a bit of sugar balances the acidity.
  • Kosher salt and black pepper

English cucumber vs standard cucumbers

The best type of cucumber to use in a cucumber salad? English cucumber, aka Persian cucumber or seedless cucumber. It’s got a much better texture and flavor compared to a standard cucumber. Here’s a breakdown:

  • English cucumbers are long and straight, with a thin, bright green skin with ridges. The seeds are very small and the flavor is sweet and mild. Because of the thin skin and small seeds, it doesn’t need to be peeled or seeded before eating. You can find English cucumbers next to the standard cucumbers in the produce section: it’s sold with a plastic covering to protect its delicate skin.
  • Standard slicing cucumbers are shorter, with thick, dark green skin and very large seeds. The thick skin and seeds can be bitter, so they’re often removed when cooking.

Want to use standard cucumbers? You can substitute the same weight of standard cucumbers here and it will taste great too! Make sure to slice them very thinly, or you can peel them if you’re sensitive to the bitter flavor of the skin.

Tips for making cucumber salad

Got your cucumbers? Here are a few tips for making this cucumber salad recipe, the ideal summer side dish for cookouts, pitch-ins and more! Here’s what to know:

  • Use a mandolin for easy slicing.mandolin is a slicing blade that makes it easy to cut vegetables uniformly. If you’ve got one, it makes this salad recipe a breeze! Make sure to wear the protective gloves that come with the blade to prevent injury.
  • Don’t have one? Use a chef’s knife to cut the cucumber as thinly as possible.
  • French cut the onions. Cut the onion from the root end to stem end to make the most attractive-sized pieces (here’s a video).
  • Refrigerate for 1 hour. You can eat this salad right away, but it’s best after 1 hour of refrigeration. This chills the salad and softens the vegetables.

Ingredients

  • 2 English cucumbers* (1 3/4 to 2 pounds)
  • 1/2 white onion, thinly sliced
  • 1/2 red onion, thinly sliced (or more white onion)
  • 3 tablespoons chopped fresh dill or 1 teaspoon dried dill
  • ½ cup white vinegar
  • 1 tablespoon water
  • 2 tablespoons granulated sugar

Instructions

  1. Slice the cucumbers as thin as possible, using a mandolin if desired. Thinly slice the onion.
  2. In a small bowl, mix the white vinegar, water, sugar, salt, and pepper. Pour the mixture over the cucumbers and onions, mixing everything together to ensure even coverage. You can serve immediately, but it’s best to refrigerate 1 hour so the vegetables become softer.
  3. Stir again to evenly mix the dressing. Then serve with a slotted spoon. Store refrigerated for up to 7 days.

*English cucumbers are seedless cucumbers with a very thin skin and mild flavor: they’re worth seeking out for this recipe. If you’d like, you can use the same weight of standard cucumbers: make sure to slice them very thinly or peel them if you’re sensitive to the bitter flavor of the skin.

If you’re like me, you might first think of a somewhat soggy, bland version of this dish served at wedding buffets. But make it at home, and this dish is brilliant! The beans are bright green and perfectly tender, sautéed in butter with garlic and toasted almonds and finished with a little lemon zest. After one bite, we were singing its praises: then finished off the entire platter. It quickly jumped to the top of my favorite green bean dishes (like this salad and this simple side).

Amandine is a French term for a dish that is prepared with toasted almonds, called “almondine” in English. Green beans almondine features green beans sautéed in butter and served with toasted, sliced almonds. The other ingredients depend on the chef, but often include garlic and lemon. While green beans are the most popular with the almondine preparation, it works with other vegetables like asparagus or broccoli or even fish. Here’s what you’ll need for this recipe:

The variety of beans you’ll most likely find in the grocery are called Blue Lake beans. French green beans cook faster than French green beans and they’re more tender in texture. Don’t confuse these with French cut green beans or Frenched green beans, which are beans that are thinly sliced.

We always opt for French green beans if given the choice: they’re just that good! You can also use standard green beans in this recipe: you may find you need to blanch them for 1 minute more than French green beans.

How to make green beans almondine: basic method

There are two basic steps to green beans almondine. You might think you could throw them right into a skillet and get to cooking, but you’ll need to blanch the beans first. Here’s what to know:

  • Blanch the beans by cooking in boiling water for 3 to 4 minutes, then plunging in ice water. Blanching is a cooking method that involves boiling vegetables until they’re crisp tender, then plunging them into ice water to stop the cooking process. This makes the beans perfectly tender before sautéing them with the butter and almonds. If they’re cooked in the skillet only, the beans can come out rather crunchy.
  • Cook the almonds and beans in butter. Toast the almonds in butter for 30 seconds, then add the beans and cook 2 to 3 minutes.
  • Add minced garlic and cook 1 minute more. Adding the garlic at the end ensures that it won’t get too browned. Finish with the lemon zest and serve immediately.

Ingredients

  • 1 pound French green beans (Haricot verts)*
  • 2 tablespoon salted butter (or olive oil or plant-based butter, for vegan)
  • ¼ cup sliced almonds
  • ½ teaspoon kosher salt

  • Zest of 1 lemon

Instructions

  1. Trim the green beans. Bring a large pot of water to a boil. Prepare a large bowl of ice water.
  2. Blanch the beans: Add the beans to the boiling water and cook for 3 to 4 minutes*, until tender but still crisp. Right when the beans are tender, remove them from the boiling water with tongs and transfer them to the bowl of ice water. Once cool, drain and pat them dry on a clean dish cloth. (You can blanch the beans up to 3 days in advance and refrigerate until completing Step 3.)
  3. Cook the beans: In a medium skillet, heat the butter over medium heat. Add the sliced almonds and cook for 30 seconds until fragrant but not yet browned. Add the dried green beans and salt and cook for 2 to 3 minutes until warmed through and almonds are lightly browned. Add the garlic and cook 1 minute more, until the garlic is fragrant. Remove from the heat and stir in the lemon zest.

*French green beans are thinner and more tender than standard green beans, but standard beans also work. Blanch them 4 to 5 minutes until just tender.

This Goat Cheese Pizza is a true masterpiece, pairing soft pockets of chevre with tangy, garlicky tomato sauce. Shower it with a few sliced onions and a sprinkle of fresh basil, and we promise: the slices will be gone in a flash! This one is a massive crowd pleaser. And side bonus: our son loves it because it reminds us of the game Taco Cat Goat Cheese Pizza! (Perfect for game night?)

There are loads of different types of toppings you can use for goat cheese pizza (we’ll get to that later). But our favorite is simple and classic: our best pizza sauce, mozzarella, and pockets of fluffy chevre. It reminds us of our favorite Baked Goat Cheese Dip, inspired by our favorite dish at a local pizzeria. Here are the elements you’ll need:

  • Pizza dough: our favorites are Best Pizza Dough, Thin Crust Pizza Dough and Pizza Oven Dough, but there are a few more options below
  • Pizza sauce: This Homemade Pizza Sauce is a must! The flavor is the best you’ll ever have (we promise)

  1. Make the pizza dough: Follow the Best Pizza DoughThin Crust Pizza Dough or Pizza Oven Dough recipes to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).
  3. Make the pizza sauce: Make the Homemade Pizza Sauce. (You’ll use about ⅓ cup for the pizza; reserve the remaining sauce and refrigerate for up to 1 week.)
  4. Bake the pizza: When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  5. Spread a thin layer of the pizza sauce over the dough. Add the mozzarella cheese. Add the goat cheese in large dollops (be generous!). Sprinkle with the red onion slices and dried oregano. Add a few pinches of kosher salt and some fresh ground pepper, to taste.
  6. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 to 2 minutes in a pizza oven).
  7. Allow the pizza to cool for a minute or two before adding the basil on top (whole leaves, lightly torn, or thinly sliced). Slice into pieces and serve immediately.

Salted Peanut Butter Chip Cookies

These sweet and salty peanut butter-packed cookies are a peanut butter lover’s dream: soft and chewy and studded with peanut butter chips for an even more intense peanut butter flavor.

I think you’ll agree with me that the best cookies consider the texture as well as flavor, and these salted peanut butter cookies don’t disappoint: soft and almost cookie dough-like in the middle, crispy on the bottom, with a coating of granulated sugar on the outside for a delicate crunch you’ll adore.

This right here is proof that a cookie doesn’t have to have chocolate to be sinfully good.

For various reasons I had to go chocolate free for a week. Let me tell you… it’s harder than I thought it would be. Even my mid-morning granola bars have chocolate in them.

And of course, the second you tell me I can’t have something, I just want it all the more. Needless to say my sweet cravings were running amok.

I wasn’t just avoiding chocolate either, it was anything acidic really, so I couldn’t even turn to fruit desserts to sate my cravings.

Peanut butter was pretty much my only remaining option for a sweet indulgence. And rather than devouring the bag of peanut butter chips by the handful like a monster (ok, I admit, I may have snuck a few handfuls), I decided to put those chips to good use bake myself some truly extra peanut butter cookies.

At which point I realized that while I have recipes for peanut butter chocolate chip cookies, peanut butter stuffed cookies, and chocolate cookies with peanut butter in them, I have never published a straight up peanut butter cookie. I know, right?! Such a travesty must be rectified, stat!

The result is quite possible the ultimate peanut butter cookie: sweet and salty with extra peanut butter and peanut butter chips for good measure (because if some is good, more is better, right?) You know me, I’m not one to half ass things, so you certainly can’t say I didn’t go all in on this one.
