Pineapple Salsa

Each bite of this pineapple salsa recipe is an explosion of sweet, savory, salty and spicy! Eat with chips or spoon over grilled fish.

Pineapple Salsa

Need an appetizer to impress? Try this Pineapple Salsa! It’s one of the best ways to use a fresh pineapple (other than eating it in chunks off the cutting board, of course). The zing of the lime and heat of the jalapeno are the ideal pairing for this sweet fruit. Grab a juicy, ripe pineapple for this one: scoop it up with chips and each bite is an explosion of sweet, savory, salty and spicy.

Ingredients in pineapple salsa

Salsa simply means “sauce” in Spanish, and refers to a wide variety of sauces that can be made with or without tomatoes. The most popular is the classic tomato salsa, but some of the more interesting salsas are spins with alternative ingredients like mango salsa or peach salsa.

There are many variations on pineapple salsa, depending on the cook. But it often follows the template of a mango salsa and includes the following ingredients:

  • Ripe pineapple
  • Red pepper or tomato
  • Red onion
  • Cilantro
  • JalapeƱo pepper
  • Lime juice
  • Salt
  • Sugar (optional)

How to cut pineapple

The most time spent in this pineapple salsa is cutting the pineapple! In fact, this salsa recipe does require quite a bit of chopping. It may feel like it takes forever, but it’s worth it! The most challenging part is how to cut a pineapple. Here’s the easiest way to tackle this spiny fruit (or see the video below):

  • Place upside down 30 minutes (optional): Use a large chef’s knife to cut off the top of the pineapple. Turn the pineapple upside down and place it on a plate; allow it to rest 30 minutes. Since pineapples are stored stem side up, gravity makes the juices run to the bottom. Resting the pineapple upside down for 30 minutes helps the juices to run back down and distribute for evenly juicy pieces.
  • Slice off the skin: After 30 minutes, cut off the other end of the pineapple. Remove the skin of the pineapple by slicing it off, following the shape of the pineapple.
  • Cut into quarters and remove the core: Slice the pineapple in half lengthwise. Lay down each pineapple half on the flat cut side, and cut it in half lengthwise again. Remove the core by cutting it out at an angle.
  • Cut chunks, then dice: Slice each quarter in half lengthwise, then turn it and slice in the other direction to create pineapple chunks.

Make a double batch for a crowd

This pineapple salsa recipe makes 2 cups, which is about 4 small servings or 2 medium servings. If you’re serving a crowd, you’ll want to double the recipe for a party-sized batch! This will use approximately an entire fresh pineapple.

The reason we didn’t make the recipe for these quantities? Well, it does take quite a while to finely dice an entire pineapple. It’s also easy to press the 2x button in the recipe below to double the quantities!

Ways to serve pineapple salsa

The best way to serve pineapple salsa is simply with chips, in our opinion. Even better, make it with warm, salty homemade tortilla chips! Here are our top ideas for how to serve pineapple salsa:

Whipped Ricotta

This whipped ricotta recipe makes an impressive easy appetizer in 5 minutes! Top it with honey for a rich, savory sweet bite.

Whipped ricotta

Got 5 minutes? Then you can whip up this stunningly simple appetizer: Whipped Ricotta! This recipe is inspired by one we had at a Mediterranean restaurant, and the pairing of fluffy, savory cheese and gooey golden honey had us all licking our plates. It’s creamy, salty sweet perfection scooped up with some warm bread. It’s the ideal starter to get any meal rolling: and it couldn’t be easier to whip up. (Literally.)

Ingredients for whipped ricotta

What is whipped ricotta? It’s simply ricotta cheese that’s seasoned and whipped until it’s creamy, then served as a dip. All you need is a handful of ingredients for this whipped ricotta recipe, making it ideal for simple entertaining. Unopened ricotta cheese lasts about 2 weeks refrigerated, so grab a container and you can whip this up on moments notice. Here’s what you’ll need:

  • Whole milk ricotta cheese
  • Milk, to make it creamy
  • Olive oil, to add richness
  • Salt
  • White or black pepper
  • Honey (optional but recommended)
Whipped Ricotta

How to make whipped ricotta

The easiest way to make whipped ricotta is with a whisk: but if you prefer, you can whip out a stand mixer for this one. Here are our notes on the process:

  • Whisk the ricotta, milk and oil for about 2 minutes until fluffy. Use whisk and whip by hand, or whip on medium speed using a stand mixer fitted with the whisk attachment.
  • A stand mixer is less work and can get it even fluffier, but the whisk is our preferred method (mainly because I prefer not having to clean the stand mixer!).
  • Use white pepper for a uniform look, or black for speckled. We bought some white pepper for this recipe to achieve a perfectly creamy look. But black pepper is just as good and looks nice as a garnish.

A note about serving temperature

One thing to note about whipped ricotta: we like this recipe best when it’s room temperature. The cold ricotta with warm bread wasn’t exactly what we remembered from the restaurant experience we were trying to recreate (which by the way, was Abigail Street in Cincinnati).

You can serve this whipped ricotta recipe immediately, but we recommend letting it sit out to come up to room temperature for about 15 minutes. Or, simply pull the ricotta out of the fridge for about 15 minutes before you want to make it.

Whipped Ricotta

How to serve whipped ricotta (honey & more!)

The sky’s the limit when it comes to serving this whipped ricotta recipe! We have a few opinions on what tastes best, but feel free to add your spin to this easy recipe.

  • Top with honey. The absolute best way to serve whipped ricotta is drizzled with honey. The way the savory and sweet flavors complement each other is truly stunning.
  • Or, top with olive oil. If you’re not a honey fan, you can also top with olive oil for a totally savory experience. (It’s not quite as good, but still delightful.)
  • Eat with warm bread. It’s stellar with grilled bread to infuse some smoky flavor. Or try with warmed pita bread or this homemade flatbread.
  • Or, eat with crackers. A simple way to eat it? With purchased crackers! Find a quality brand you love. This is a good gluten-free option: there are lots of great brands that offer nut or legume-based crackers.

Chocolate Chip Banana Bread Muffins

This hand-held version of my go-to banana bread is moist, flavorful, and chock-full of crunchy pecans and mini chocolate chips (trust me, banana bread is all the better with chocolate).

These banana bread muffins make for the perfect mid-morning or afternoon snack, when you need something to sustain you to the next meal. Personally, I’d rather have a banana bread muffin than a granola bar any day.

Muffin tin with banana bread muffins, one cup filled with raw pecans and one with chocolate chips, and cup of coffee

Bananas never go bad in our house, even the squishiest, brown-skinned fruit always finds its way into a quick bread of some sort. And yet, have you ever noticed that quick breads are never actually quick to bake? A full loaf can take upwards of an hour to bake!

But these quick and easy banana bread muffins are actually worthy of being called quick bread: their compact size means you can go from mash to mouth-full in less than 30 minutes (ok, maybe 40… you should probably let them cool a little bit before you dig in). Still, compared to the nearly hour-long bake time of most loaf recipes, it’s a significant time saver.

Chocolate chip banana bread muffins, one split in half to show texture, with a cup of coffee in homemade ceramic mug

If you ask me, banana bread may as well be one of the major food groups (along with french fries, tacos, matcha, and chocolate.) I mean, it totally counts as a daily serving of fruit, right? (Yes. It does.)

These tender, flavorful muffins stay moist for days (we had 1 muffin left 6 days later and it was still as moist as the day it was baked). It must be banana magic or something because normal muffins never keep this well.

Burrata Pasta with Tomato Basil Sauce

Burrata pasta is simplicity at its finest! Pair this rich cheese with a hearty tomato basil sauce for an easy dinner that’s truly sublime.

Burrata Pasta

Burrata cheese is one of life’s greatest pleasures (if you’re a cheese lover like we are). One of the best ways to make it into a meal? This Burrata Pasta, a beautiful example of Italian-style culinary simplicity. The majestic balls of fresh mozzarella sit atop a pasta twirls entwined with a rustic tomato basil sauce. Breaking into the cheese releases its creamy, rich interior into each bite. We simply could not stop eating this one, and immediately added it to our “best of” dinner list.

What’s burrata, exactly?

Burrata is an Italian fresh mozzarella cheese filled with cream and cheese shreds, called straciatella. When you cut into the ball, the creamy cheese comes spilling out: perfect for topping pasta and pizza.

If it sounds rich, that’s because it is! Burrata is higher in fat content than normal mozzarella and most other cheeses. This cheese originated in Southern Italy, and it’s now served all over the country and world. It’s on the pricier side for a cheese, but it’s absolutely worth it. When we want to impress, it’s burrata all the way.

Burrata pasta

Ingredients in this burrata pasta

Burrata is fantastic for topping pasta because it’s rich and delicious, and because it looks showy! We modeled this recipe after one a friend made for us on a summer evening. Topped with burrata balls and sliced cherry tomatoes, spaghetti looks positively glamorous. Here’s what you’ll need for this burrata pasta:

  • Burrata cheese
  • Canned whole tomatoes, San Marzano if possible
  • Garlic
  • Basil
  • Olive oil
  • Cherry tomatoes
  • Parmesan cheese
  • Spaghetti or bucatini pasta
Burrata pasta

Make a rustic tomato basil sauce

The main task for this burrata pasta? Making the rustic tomato basil sauce. Here are a few tips to keep in mind for this method:

  • Look for whole canned San Marzano tomatoes. San Marzano tomatoes are an Italian variety of tomato (not a brand). They have the best sweet, developed flavor straight out of the can. They’re becoming widely available in many American grocery stores, so you should be able to find them in the canned tomato section. They’re worth seeking out here.
  • You’ll mash the tomatoes into a sauce with a potato masher. The flavor of whole tomatoes is a step above crushed tomatoes. So for this sauce, you’ll crush them yourself using a potato masher! See the photo for the approximate texture.
  • This results in a chunky texture. The chunky, rustic texture gives beautiful bursts of tomato basil flavor. You can immersion blend it to make it smoother, but we prefer it this way.

How to serve this burrata pasta

This burrata pasta recipe is all about presentation! It’s at its best when served on a large platter topped with all the fixings. Here are a few things to note:

  • Top with burrata balls, then cut them for serving. As each eater helps themselves, they can cut off a bit of the burrata. Alternatively, you can break up the burrata into small pieces and gently toss it.
  • Cherry tomatoes are optional! They’re perfect if you’re serving burrata pasta in the summer. If you can’t find great tomatoes, leave them out and it’s just as good.
  • Garnish with basil, olive oil, and pepper. It’s all in the presentation here! Get creative and garnish your masterpiece with basil and cherry tomatoes. We like a few grinds of black pepper, as well.

Burrata Pasta

Description

Burrata pasta is simplicity at its finest! Pair this rich cheese with a hearty tomato basil sauce for an easy dinner that’s truly sublime.

Ingredients

  • ¼ cup olive oil
  • 4 medium garlic cloves, peeled and sliced
  • 28 ounce whole San Marzano tomatoes
  • 1 teaspoon kosher salt
  • ½ cup roughly chopped basil leaves, plus more for garnish
  • 8 ounces spaghetti or bucatini pasta
  • ½ pint red and yellow cherry tomatoes, sliced in half (or, omit if they’re not in season)
  • ¼ cup grated Parmesan cheese
  • 8 ounces (2 balls) burrata cheese
  • Fresh ground black pepper, for serving (optional)

Instructions

  1. Make the tomato basil sauce: Add the olive oil to a saucepan over medium heat. Add the sliced garlic and cook for about 30 to 45 seconds until lightly browned and fragrant. Add the whole tomatoes with the can liquid, taking care as it may spit as the tomatoes hit the hot oil. Use a potato masher to break up the tomatoes into small pieces (see the sauce photo above). Add the kosher salt and chopped basil leaves and bring to a heavy simmer. Cover the saucepan with a lid slightly ajar and simmer, bubbling rapidly, for 10 to 12 minutes until thickened. (If you prefer a smoother texture you can immersion blend it, but we highly recommend the chunky rustic texture here.)
  2. Cook the pasta: Meanwhile, bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente. Set the timer for a few minutes less than the package instructions and then taste: the pasta should be just done, still with some firmness. Drain the pasta and return to the pot. Add a drizzle of olive oil if the sauce is not yet done, to prevent sticking.
  3. Serve: Toss the noodles with the sauce until well coated. Add to a platter and top with the grated Parmesan. Add the two burrata balls, and arrange the cherry tomatoes around them. Top with a drizzle of olive oil, several pinches kosher salt, fresh ground black pepper and additional chopped basil. When serving, have each eater break off pieces of the burrata for their portion, or simply break it into pieces and lightly toss throughout the pasta.
