Want our best healthy snack trick? This peanut butter dip! It’s just 4 ingredients and somehow tastes like frosting. Really, Alex and I were surprised the first time we tasted it. How is this so good, yet so simple? It’s works for any occasion: a quick snack for kids, a family party, or a big snacks table. Or if you’re me, use it for a sweets craving after a meal! I’ve been making it for me and our toddler Larson, and it disappears in a flash. This is a go-to healthy treat for us: and we’re thrilled to share with you.

What’s in this peanut butter dip?

The other day, Alex and I feed our son Larson some apple slices with peanut butter. I joined in too, but the peanut butter was so thick it was hard to dip the apple slices and get it to stick. What if I made a peanut butter apple dip? I asked. Something creamier so it’s easier to dip? I threw together a few things in our fridge and pantry, and we took a bite. Whoa, said Alex. It tastes like frosting! Somehow what I threw together tasted weirdly good, and we’ve been making it ever since. Here are the secrets behind this peanut butter dip (scroll down for the quantities):

  • Greek yogurt: Use plain, full fat Greek yogurt for the best creamy effect
  • Peanut butter: Use all natural peanut butter if you have it! But whatever you have will do.
  • Pure maple syrup: None of the fake stuff! Use pure, all natural syrup.
  • Vanilla extract

That’s it! Mix them together, and you’ve got the tastiest bowl of apple dip.

A quick tip: how to cut apples FAST!

OK, perhaps you already know this trick. But I made it into my 30’s without knowing the fastest way to cut apple slices. (PS Now that I’m a parent, this skill is clutch!) I use to think that I should core the apple with an apple-corer. Or, cut the apple into quarters, then use a paring knife to scoop out the seeds. Not needed! This trick is way easier. See the video below (but you don’t need to peel the apple in this case!).

  1. Holding the core of the apple, use a large chef’s knife to slice off four sides of the apple, cutting as close to the core as possible.
  2. Take one of the quarters and place it flat side down on the cutting board. Then cut it into thin slices.
  3. Repeat with the remaining quarters!

What else to serve with this dip besides apple?

Green apples are our absolute favorite way to eat this peanut butter dip! I’m partial to the sweet tart taste of a green apple, so it’s our top choice. It also makes it a very healthy snack option. But if you’d prefer to dip with something else, here are all our dipping ideas:

  • Mix of green, red and yellow apples (looks stunning!)
  • Pineapple chunks (here’s how to cut a fresh one)
  • Strawberries

Well, over here we’ve got fancy recipes like sourdough bread and the perfect homemade margherita pizza. But just as important are non-recipes like what Alex and I eat for lunch every day. Making “real” recipes, and throwing together a 5 minute fast lunch are equally as valid! So how to eat a plant based lunch without spending hours on meal prep? How to make a quick dinner out of nothing? It starts with a can of chickpeas.

This simple chickpea salad is what Alex eats for lunch on the regular. (I often make our best oatmeal, but I like this too!) It’s so easy to make that it’s more like an idea than a recipe. But we wanted to share it with you because it’s a lifesaver and illustrates one idea for what it means to eat plant based at lunch. Here’s how to make a fresh healthy, filling plant based lunch: this Mediterranean-style chickpea salad! Exact quantities are in the recipe below — scroll down!

  • Chickpeas: Drain a can of chickpeas, then rinse it.
  • Bell Pepper: Dice a bell pepper (about a handful).
  • Cucumber: Dice an English cucumber (about a handful). We like using an English cucumber because it doesn’t need to be peeled. If all you can find is a standard cucumber, peel it first!
  • Seasonings: Place it all in a bowl and drizzle with olive oil, red wine vinegar, salt and smoked paprika.

That’s it! Chickpea salad complete. Place it in a sealed container and to bring to the office: refrigerate until serving! The recipe below has all the exact quantities. Once you get comfortable with it, you won’t even need to measure. And remember that instead of bell pepper and cucumber, you can use any veggies in your fridge.

This salad is done in 5 minutes and is a healthy whole food plant based (WFPB) dinner option. Takeout, on the other hand, takes longer (30 minutes?) and is probably no so healthy. You be the judge! Here’s what we’d imagine serving with it to make it a dinner:

  • Rice, quinoa, or another whole grain. Use whatever you have leftover! Or whip up a pot of white rice or quinoa in about 20 minutes. Even faster? Whole wheat couscous cooks in 5 minutes.
  • Any veggies! Throw the chickpea salad in a bowl with rice or quinoa and any raw veggies you’re trying to use up. Drizzle them with olive oil and sprinkle with salt.
  • Dollop with hummus or a sauce! A creamy sauce is nice if you have some hummus in the fridge, or our best tahini sauce is pretty fast.

What’s in vegan fettuccine alfredo?

Who would have known that blending up a few veggies and nuts could create a creamy sauce that tastes like dairy? These days, there are so many inventive vegan recipe concepts for making creamy sauces. With this one, Alex and I wanted to use cauliflower to make a white sauce like our Cauliflower Sauce, but remove the Parmesan cheese. Here’s what we ended up with for this recipe:

  • Cauliflower: This cruciferous vegetable makes the body of this sauce; it also packs in Vitamin C and fiber.
  • Cashews: Cashews make the sauce creamy and add plant based protein, helping it to be more filling.
  • Garlic & onion powder: These flavorings round out the savory profile.
  • Olive oil & vegetable broth: Olive oil is used for sauteing, and veggie broth for simmering the sauce.

Cook the ingredients for about 10 minutes on the stove. Then blend them until a creamy sauce forms and mix that with the noodles. Voila! You’ve got vegan fettuccine alfredo, an easy plant based dinner recipe in 30 minutes!

Good question. A new study found pasta can actually help you lose weight. The Italian researchers found that eaten in moderation, pasta can be part of a healthy diet. This is a full 180 of conventional wisdom, right? Alex and I have been enjoying pasta in moderation for years—so we’re glad it’s back in good graces.

  • Legume Based Pasta: Pasta made from lentils is becoming much more widespread these days. It can be made from black beans, lentils, or chickpeas.   • Zucchini Noodles: Making this pasta with vegetable noodles like Zucchini Noodles would also be tasty! You can make your own or they’re easy to find prepackaged.

How to cook pasta to al dente

If you’re using standard pasta for this vegan fettuccine alfredo, you absolutely must cook it to al dente. What’s al dente? In Italian it means “to the bite.” It refers to pasta that is still firm on the inside when cooked. The ideal al dente texture is a tender exterior balanced by a firm bite with a fleck of white at its core. Here’s how to cook pasta to al dente:

  • Boil the pasta in a large pot of salted boiling water.
  • While cooking, check pasta continually for doneness.
  • As soon as the pasta has a tender exterior but a fleck of white at its core, drain it! Even a few seconds can be the difference between al dente and limp noodles.

What to do with leftover alfredo sauce?

The sauce for this vegan fettuccine alfredo makes 6 cups total. Alex and I measured, and for our taste we liked using about 5 cups of alfredo sauce for 1 pound of pasta. That means, you’ll have about 1 cup leftover after making 1 pound of pasta.

  • 1 pound fettuccine noodles (use gluten-free, legume, or zucchini noodles if desired)
  • 4 garlic cloves
  • 1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
  • 4 tablespoons olive oil
  • 1 cup raw unsalted cashews
  • 2 cupvegetable broth
  • 1/8 teaspoon onion powder
  • 1/8 + 1/4 teaspoon ground black pepper
  • Pinch nutmeg
  • 1 teaspoon kosher salt
  • Finely chopped parsley, to serve

Instructions

  1. Mince the garlicChop the cauliflower.
  2. Make the pasta: Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). Then drain the pasta and spinach and return to the pot.
  3. Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, onion powder, black pepper, nutmeg and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  4. Blend the sauce: Carefully transfer the contents to a blender and add the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon more black pepper. Blend on high until a smooth sauce forms.
  5. Serve: Pour about 5 cups into 1 pound pasta (1 cup will be left over), or use it to taste. Top with finely chopped parsley and serve immediately.

The Charming City of Ljubljana, Slovenia

Ljubljana, the city of dragons, may be one of the smallest European capital cities, but it is certainly not lacking in terms of personality, history and charm. After a few short days you’ll be so in love with this livable, walkable, and lovable city that you won’t want to leave!

An easy 90 minute drive from Zagreb, Ljubljana makes a great side trip if you’re visiting Croatia. It’s a city of many influences, managing to feel a little bit Eastern European and Mediterranean at the same time. In other words: it’s downright charming!

We had 3 unaccounted-for nights in our Croatia trip, and couldn’t decide if we wanted to explore Croatia’s Istrian peninsula or head north to Slovenia. We hemmed and hawed over this for weeks before finally deciding (we really need to get better about making decisions without obsessing over them).

In the end, we figured that by this point in the trip, we would have seen plenty of quaint beach towns, and a change of scenery might be appreciated. Plus, it gave us a chance to check another country off our list too!

We definitely made the right call: Ljubljana turned out to be absolutely delightful, and one of our favorite places of the entire trip.

Once we figured out how to pronounce it, that is. (Hint: treat the j’s more like y’s… so it’s pronounced something like lube-lee-ah-na).
