Here’s a refreshingly simple recipe that’s just begging to jump on your table: citrus salad! It stars all the beautiful, vibrant citrus: tangy grapefruit, navel oranges, and sweet blood oranges. They’re drizzled with a zingy dressing, then topped crushed pistachios and fresh mint. It’s so gorgeous that you can’t help but eat it! This healthy side dish is perfect with salmon or to offset the richness of pasta.

How to make a citrus salad?

This citrus salad is a little different than what you might expect from the title: it’s got no salad greens! Green salads are what Alex and I most often use to accessorize our meals. But there are so many salads without greens: think potato salad, pasta salad, and bean salad. Here, citrus salad is a variety of citrus fruits arranged on a plate. You can use any mix of citrus fruits that you like! Here’s what we used:

  • Navel oranges
  • Blood oranges if you can find them! The mix of colors and flavors is stunning.
  • Grapefruit
  • Vinaigrette: White wine vinegar, olive oil, Dijon, and maple (optional if you’re limiting sugar)

The garnish steps it up!

This citrus salad is more of a concept than a recipe. As we mentioned, you can use any citrus you like! Once you’ve drizzled the vinaigrette over the top, adding the garnishes really takes it up a notch. Again, it’s highly customizable. Here’s what we used:

  • Fresh mint. Mint is perfect with citrus! Not only does it look beautiful, it’s a nice color contrast. Other good herbs to pair: fresh thyme or basil.
  • Thinly sliced shallots. Shallots are like a baby red onion: they’re much milder in flavor. They look lovely thinly sliced into rings, with a light purple color.
  • Finely crushed pistachios. If you have them on hand, crushed pistachios look like bright green confetti. It’s not required, but it adds a nice touch.

How to cut off a citrus peel

The only piece of technique in this citrus salad is cutting off the orange peel. Cutting off the peel (instead of removing it by hand) removes all the tough pith and makes for a clean-looking salad. It’s actually the first step in our How to Cut an Orange method, which is also a French method called cutting it into supremes. You’ll use the same method for oranges and grapefruits here. Here’s how to cut off a citrus peel for this salad:

  • Step 1: Slice off the ends. Use a large chef’s knife to slice off both ends of the orange. Make sure you’ve cut through all of the pith and can see some of the orange flesh.
  • Step 2: Cut off the peel. Angle your knife and follow the round shape of the orange to remove the peel. Be careful not to cut too much of the orange flesh away.

This citrus salad is so simple and refreshing, the vibe goes with almost anything you could imagine (really)! It’s got a bit of a Mediterranean-style or Italian vibe, so it pairs nicely with meals in that style. It’s a lovely side for lasagna or salmon. Here are some of our favorite ideas for pairing:

If you want to change the vibe of this citrus salad to work with Mexican or Latin-style flavors like as a side for enchiladas or tacos, here’s what to do:

  • Use chopped cilantro instead of mint.
  • Use 1 tablespoon finely chopped red onion instead of shallot.
  • Use lime juice instead of white wine vinegar.

Description

Ingredients

  • 2 small grapefruit
  • 1 navel orange
  • 2 small blood oranges
  • 1 small shallot
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • Pinch kosher salt
  • 3 tablespoons olive oil
  • Fresh mint, for garnish
  • Fresh ground pepper, for garnish
  • Finely crushed pistachios (optional), for garnish

Instructions

  1. Cut off the peel of the grapefruit and oranges: slice off the ends, then angle your knife and follow the curve to remove the peels (follow Steps 1 & 2 of How to Cut an Orange). Slice the citrus into rings.
  2. Thinly slice the shallot into thin rings.
  3. In a medium bowl, stir together the white wine vinegar, Dijon mustard, maple syrup, and 1 pinch kosher salt. Then gradually whisk in the olive oil 1 tablespoon at a time until creamy.
  4. Arrange the citrus and shallots on a platter or serving plates. Drizzle with vinaigrette. Top with torn mint leaves and fresh ground pepper. If desired, top with finely crushed pistachios.

What’s in these vegan Sloppy Joes?

These vegan Sloppy Joes are full of whole food plant based (WFPB) ingredients. Lentils form the base, and they’re covered in a gooey sauce with savory spices! Here’s what they’ve got:

  • Onion, garlic, and green pepper bring big flavor
  • Brown or green lentils are the base: they provide texture and lots of plant based protein
  • Olive oil & vegetable broth for sauteing and simmering
  • Organic ketchup: look for organic and read the label to find a ketchup with as few ingredients as possible!
  • Vegan Worcestershire sauce: It can be found at your local grocery store or online! If you don’t eat 100% vegan, you can use regular (it has a small amount of anchovies).
  • Spices: mustard powder, onion powder and chili powder round it out!

The basic method: how to make vegan Sloppy Joes

These vegan Sloppy Joes are very easy to make! They do take about 50 minutes total, but most of that is hands off. So, you’ll have to plan ahead on this one. Leftovers save well, so if you don’t have time on a weeknight, meal prep a batch and have it in the fridge. It tastes just as good days later! Here are the basic steps for this recipe:

  • Prep the veggies: Dice the onion, garlic and green pepper. Because what good Sloppy Joes recipe doesn’t have green pepper?
  • Saute: Saute the veggies for 5 minutes.
  • Simmer: Add the rest of the ingredients and simmer for 30 to 35 minutes until a thick sauce forms and the lentils are tender.
  • Stir in ketchup and serve. You’ll stir in one last hit of ketchup to intensify the flavor.

Why lentils? A note on plant based meats

Many vegan Sloppy Joes recipes use plant based meat versions of ground beef. Here’s the thing: Alex and I aren’t so into plant based meat substitutes (like veggie crumbles or Impossible Burger). They’re all the rage these days, but guess what? They’re also processed food.

According to Dr. David Katz in Heated, plant based meats are a step up from eating processed meats, but a step down from whole foods. So if you’re looking to eat lots of plants for your health: start with actual veggies! That’s why we’ve used lentils as the filling in these Sloppy Joes.

Make it in advance, or use our quicker version!

If you want to make it on a weeknight but don’t have 50 minutes, we get it! We usually don’t either. Here’s what we would do:

  • Meal prep in advance. Make it the night before or on the weekend. Leftovers save well! Just refrigerate them until serving, and reheat in a saucepan. Add an extra squeeze of ketchup if it seems dry.
  • Use our quicker version. Try our Two-Bean Sloppy Joes: they take just 20 minutes! We like the flavor and texture of these a little better, but the bean version is nice for a quick fix.

Ingredients

  • 1/2 green bell pepper (about 3/4 cup diced)
  • 1 medium onion (about 1 cup diced)
  • 4 garlic cloves
  • 2 tablespoons olive oil
  • 2 cups brown or green lentils
  • 1 quart vegetable broth
  • 1 1/2 cups organic ketchup, divided*
  • 2 tablespoons vegan Worcestershire sauce
  • 1 teaspoon each mustard powder, onion powder, chili powder, and kosher salt
  • Hot sauce, to taste
  • Pickled onions, to serve
  • Bread and butter pickles, to serve
  • 8 whole wheat buns (make sure they are vegan, use gluten-free as desired)

Instructions

  1. Dice the bell pepper. Dice the onion. Mince the garlic.
  2. In a large saucepan, heat the olive oil over medium high heat. Add the bell pepper and onion and cook 5 minutes until the onions are translucent. Add the garlic and cook for 1 minute.
  3. Add the lentils, vegetable broth, 1 cup ketchup, Worcestershire sauce, mustard powder, onion powder, chili powder, and kosher salt. Simmer uncovered for 30 to 35 minutes until most of the liquid is cooked out and the lentils are tender.
  4. Stir in another 1/2 cup ketchup. Remove from the heat and serve on a bun with pickled onions and pickles. (If desired, toast the buns prior to serving.) Make ahead: Leftovers save well for 3 to 4 days. Make in advance, refrigerate and then reheat in a saucepan. Add an extra squeeze of ketchup if it seems dry.

Here’s the thing: this concept works best with a meat or seafood, where you can have a filling protein and a side cooked all at once. But for this one, Alex and I wanted to create a whole food plant based sheet pan dinner to load on the veggies. This recipe has 4 of our best vegetables to eat all at one time: and it’s seriously tasty, too. It’s perfect to meal prep for healthy dinners or lunches throughout the week. Let’s get started!

What’s in this sheet pan dinner?

This sheet pan dinner is all about loading on the healthy vegetables! Did you know that per the New York Times, 40% of Americans now want to eat more plant based foods? This makes Alex and me thrilled, because that’s why we started this website. Our philosophy: eating lots of vegetables can be seriously delicious. So, it’s not like you’re giving anything up or having will power: they just taste good.

Here’s what we’ve packed into this easy sheet pan dinner:

  • Broccoli is high in fiber, relatively high in protein for a green veggie.
  • Red onion packs in the vitamins!
  • Sweet potatoes are high in beta-carotene, Vitamin A, and fiber.
  • Red pepper high in vitamin C: double your daily need!
  • Chickpeas load it with plant-based protein to make it a filling meal!
  • Olive oil
  • Spices: Garlic powder, Old Bay and Italian seasoning
  • Lemon for a bright zing!

The basic concept: making dinner on a sheet pan

The basic concept for a sheet pan dinner is to place your veggies on a sheet pan and roast until tender. Many sheet pan dinners use protein like chicken or shrimp, and take the pan out of the oven a few times to add veggies in the order of their cook time. We wanted to make this sheet pan dinner whole food plant based (WFPB) and seriously easy, so guess what? All the veggies are roasted at the same time.

Yep, there’s no taking the sheet pan in and out of the oven here. Just throw all the veggies onto the sheet pan and roast. Here’s what you’ll do:

  • Chop all the veggies (see instructions below).
  • Mix them with the drained chickpeas, olive oil, and spices.
  • Place on parchment lined baking sheets and roast for 30 minutes at 450 degrees, rotating the pans once after 20 minutes.

How to serve this sheet pan dinner

You can serve this sheet pan dinner on its own: just the straight up veggies! But to make it a filling and complete meal, here’s what we did:

  • Serve with rice, quinoa or another whole grain. Adding a little rice, quinoa or a whole grain makes it into a more filling meal. We’d suggest about 3/4 cup cooked grain per serving.
  • Serve over seasoned lentils! Alex recently made us a veggie dish for dinner and instead of serving it over rice, he served it over lentils instead. It was really good! The benefit of this is it packs in even more plant based protein! Try our Seasoned Brown Lentils, Seasoned Black Lentils, or Instant Pot Lentils.
  • Dollop with sour cream, cashew cream or another sauce. It’s nice to have a dollop of creaminess to tie everything together. We used sour cream, or for vegan cashew cream is delicious (make it ahead). A few other sauce ideas: Best Tahini Sauce, Cilantro Sauce, or Lemon Yogurt Sauce.

Can you substitute anything for chickpeas?

What if you don’t like chickpeas? Chickpeas are essential for adding plant based protein to this dish, which makes it filling enough for a main meal. Here are a few things you could substitute that still have plant based protein:

  • 15-ounce can black beans
  • 1 1/2 cups shelled edamame

Ingredients

  • 1 crown broccoli (1/2 pound)
  • 1 medium red onion
  • 2 medium sweet potatoes (1 1/2 pounds)
  • 2 medium red potatoes
  • 1 red pepper
  • 1 15-ounce can chickpeas
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons Old Bay seasoning*
  • 1 tablespoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 lemon
  • Rice or quinoa (or another whole grain or seasoned lentils), to serve (optional)
  • Sour cream or cashew cream, to serve

Instructions

  1. Adjust the oven racks for roasting 2 trays. Preheat the oven to 450 degrees Fahrenheit.
  2. Optional: If serving with rice or quinoa, follow How to Cook Brown Rice, Instant Pot Brown Rice, How to Cook Quinoa or Instant Pot Quinoa.
  3. Chop the broccoli. Cut the onion into thick slices. Dice the potatoes. Dice the red pepper.
  4. Place all the vegetables in a large bowl. Drain and rinse the chickpeas, then add them to the bowl. Mix in the olive oil, garlic powder, Old Bay, Italian seasoning, and kosher salt until everything is evenly coated.
  5. Line two baking sheets with parchment paper (we prefer this to silicone baking mats because it results in crispier veggies). Spread the vegetables evenly onto each sheet.
  6. Place into the oven and bake for 20 minutes (do not stir!). Remove the pans from the oven, rotate them, and roast another 10 minutes (for 30 minutes total) until tender and lightly browned on one side.
  7. Cut the lemon into wedges, and spritz the veggies with fresh lemon juice to taste. (Required: this step adds just the right zing! Or you can serve with lemon wedges.)
  8. Transfer to a serving bowl or dish and serve immediately with rice or quinoa. Top with sour cream or cashew cream.

Notes

*If you can’t find Old Bay, you could try 1 teaspoon paprika and 3/4 teaspoon kosher salt or celery salt.
