Future Fridays: Mike Lee on The Future of Food

In this installment of Future Fridays, Mike Lee, founder of Alpha Food Lab's The Future Market, speaks about the importance of biodiversity in the food industry and how it can save the world. Lee notes that while the Green Revolution of the 1960s fed millions of people, it was built on the standardization of crops, which has led us to a monoculture of food. "Despite the fact that we have 80,000 SKUs in the grocery store, 75 percent our of food comes from just 12 plants and 5 animal species," he says. By creating conceptural products, The Future Market tries to imagine what grocery shelves would look like if there was more biodiversity.
