Here’s a salad to impress. It’s everything a classy spinach salad should be, full of texture and flavor contrasts. You’ll barely notice you’re eating this healthy leafy green when it’s covered tangy balsamic vinaigrette. There’s crunchy smoky pecans, almost bacon-like glazed with maple syrup and soy sauce. Add hard boiled eggs or a crisp-tart apple, and you’ve got a stunning side salad that will make everyone ooo and ahhh. (It happens every time we serve it…really.) It’s almost like the little black dress of salads: it’s brilliant for any occasion.

You may notice this salad has a vague retro vibe. In fact, it’s a spin on my Grandma’s 1970’s spinach salad…with a few tweaks! For the dressing we went with a classic balsamic vinaigrette, which complements the flavors perfectly. Instead of bacon, smoky glazed pecans create the illusion of meat but make the salad vegetarian. (For a fully plant based salad, we’ve got options too!) Here’s what you’ll need for this classic spinach salad:

  • Hard boiled eggs or apple: Hard boiled eggs require forethought, so to whip this up in a flash substitute a crisp-tart apple. It’s just as good!
  • Smoky pecans: The secret to bacon flavor without meat! Glaze whole pecans in a mixture of soy sauce, maple syrup and smoked paprika.
  • Spinach: Baby spinach is more tender with a sweeter flavor; or, use chopped standard spinach.
  • Shallot: Thinly sliced shallot is the best trick for green salads. Its delicate oniony flavor is gentler than red onion.
  • Feta (optional): A sprinkle of feta cheese looks like confetti and brings a salty pop.
  • Balsamic vinaigrette: Tie it all together with this incredible homemade dressing.

How to make smoky pecans (or use plain!)

One of the best parts of this salad is the pecans masquerading as bacon. Of course, if you’re running short on time: you can skip this step and just use plain pecans! But to make a truly magnificent spinach salad, it’s worth the time. Here are a few notes about the process:

  • You’ll need a skillet and 6 to 8 minutes. This is the time it takes to heat the glaze to cover the nuts.
  • They may come out soft or crunchy: either works! Making glazed nuts requires hitting the perfect sugar caramelization step to get them to dry into a crunchy glaze. If they come out soft: that’s ok! In fact, they taste more like bacon that way.

What’s the best dressing for a spinach salad? Balsamic vinaigrette. Why? Spinach can have a bitter flavor undertone, so the tangy and subtly sweet notes of the dressing are the perfect pairing. Our favorite balsamic vinaigrette is very easy to whip up at home. All you need is 4 ingredients:

  • Balsamic vinegar
  • Dijon mustard
  • Maple syrup
  • Olive oil

The only other thing to note is to add the olive oil 1 tablespoon at a time and whisk vigorously. This is the key to getting a perfectly creamy emulsion. The Djion mustard also helps to make a fantastically creamy texture.

Using hard boiled eggs in salad

This spinach salad is absolutely classic with hard boiled eggs, as it harkens back to that 1970’s bacon and egg salad. And, they add a great amount of protein! One egg has 7 grams of protein. This is specifically helpful when you are looking for a side dish with protein to round out a vegetarian dinner.

If you can, make up a batch of hard boiled eggs in advance. This makes the salad quicker to put together. Store the hard boiled eggs refrigerated with the shell on (this keeps them fresher).

Apple makes this spinach salad quick and easy (and vegan)

Often we don’t think ahead enough to have time for hard boiled eggs. So if we’re serving this for an easy weeknight meal side dish, we like to use an apple instead! Using a crisp-tart apple makes a great flavor and texture contrast and fills out the salad. Of course, it doesn’t have the protein that a hard boiled egg does. But it’s a great stand-in! Of course, you can also add apple to salad with the eggs: even better!

You can also use this as a vegan variation. Use a crisp tart apple and omit the feta cheese crumbles: or use a dairy free cheese crumble of your choice.

Ingredients

  • 2 hard boiled eggs or 1 large crisp tart apple
  • 1/2 cup whole pecans*
  • 1 tablespoon soy sauce (or tamari or coconut aminos)
  • 1 1/2 tablespoons maple syrup or sugar
  • 1 teaspoon smoked paprika
  • 2 pinches kosher salt or flaky sea salt
  • 1 recipe Best Balsamic Vinaigrette
  • 6 cups baby spinach leaves or chopped standard spinach
  • 1 shallot
  • 1/2 cup feta cheese crumbles (optional)

Instructions

  1. Make the hard boiled eggs: Make the hard boiled eggs, if using (or make them in advance). Chop them into bite-sized pieces.
  2. Make the smoky pecans: Add the pecans, soy sauce, maple syrup and smoked paprika to a small non-stick skillet over medium heat. When it just starts to bubble, reduce the heat to low but still slowly bubbling. Simmer 6 to 8 minutes, stirring occasionally. In the last minute when the liquid is mostly evaporated, stir continuously until it is totally cooked out and the nuts start clumping together. Immediately remove from the heat and transfer the pecans to a sheet of parchment paper in a single layer. Sprinkle with 2 pinches kosher salt and allow to cool to room temperature, about 5 minutes. 
  3. Make the dressing: Make the Balsamic Vinaigrette
  4. Prep the fresh ingredients: Thinly slice the shallot. If using apple instead of hard boiled egg, thinly slice the apple. 
  5. Serve: Place the spinach on plates or in bowls. Top with hard boiled eggs or apple slices, smoky pecans, sliced shallot, and feta cheese crumbles.

Make it into tacos, use it as a plant based stand-in buffalo wings, or hide it in alfredo sauce. Here’s our new favorite way to use these tasty florets: in a cauliflower stir fry! Fry it until lightly charred and tender, then add bell peppers and a punchy stir fry sauce. It’s the best way to make eating your veggies irresistible! Try it as a healthy side dish or an easy plant based dinner (with the protein adders below).

This cauliflower stir fry is fast and easy to make! On its own it works as a side dish, but eat it with a plant based protein (see below) and it’s an easy dinner. The main thing to note is that cauliflower requires much more time to stir fry than other veggies, so you’ll need to add it to the pan first. Here are the basic ingredients you’ll need for this stir fry:

Notes on the stir fry sauce

This cauliflower stir fry has an incredible stir fry sauce that brings in lots of savory, salty and sweet flavor! Use the recipe as printed, or another option is our Go To Stir Fry Sauce. It’s just as good and is an oil free option. Here are a few notes on the ingredients in the stir fry sauce:

  • Soy sauce: Use regular sodium to get the full seasoning. Tamari is a gluten free soy substitute, or use coconut aminos for a soy free gluten free substitute. You may need to add a pinch more salt in both cases.
  • Cornstarch: Arrow root powder is an effective substitute for cornstarch in stir fry sauces!
  • Miso: Miso is a Japanese fermented soybean paste that’s full of nutrients and savory flavor. It’s a must in this sauce and can’t be replicated. You can find miso in the international foods aisle near the Japanese ingredients. There are lots of types of miso: we used yellow or light miso here.
  • Gochujang (optional): Want to add a little spicy funkiness to your sauce? This Korean chili paste steps it up a notch.

How to make a cauliflower stir fry: some tips!

The overall process for this cauliflower stir fry is easy: but there are a few things to note to make it come out perfectly. Here’s what to know:

  • Stir fry the cauliflower about 5 minutes before adding other veggies. Here’s the kicker: cauliflower takes much longer than other veggies to stir fry. If you add them all at once, it will come out too tough. Make sure to follow the instructions exactly.
  • Use medium high heat. The point of a stir fry is to cook at high heat: quickly. This will get nice char marks onto your cauliflower.
  • Don’t double the recipe. The biggest tip for a stir fry: you can’t crowd the pan! If there are too many veggies, they’ll steam instead of stir fry. If you want to increase quantities, cook the veggies in batches then re-warm everything together.

Add protein to make it a main dish!

  • Tofu: Cook Marinated Tofu or Pan Fried Tofu, then add it once the stir fry is done.
  • Shrimp: Make Garlic Shrimp but use sesame oil instead of butter and omit the lemon.

Ingredients

  • 1 medium head cauliflower (2 pounds)
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 medium white onion
  • 3 green onions
  • 3 tablespoons rice vinegar*
  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 1 tablespoon light miso
  • 1/2 tablespoon gochujang (optional)
  • 2 tablespoons sugar (or maple syrup)
  • 2 tablespoons sesame oil (regular, not toasted)
  • 1 teaspoon cornstarch (or arrowroot powder)
  • 3 tablespoons neutral oil for stir frying, divided
  • To serve as a main dish: Add 3/4 cup cashews with cauliflower**, add 1 cup shelled frozen edamame in the last 2 to 3 minutes, or add Marinated Tofu, Pan Fried Tofu, or Sauteed Shrimp and serve with rice

Instructions

  1. Chop the cauliflower into small florets. Thinly slice the bell peppers. Thinly slice the white onion. Thinly slice the green onion.
  2. In a medium bowl, whisk together rice vinegar, soy sauce, miso, gochujang, sugar, sesame oil, and cornstarch (or make the Go To Stir Fry Sauce). 
  3. In large skillet, heat 2 tablespoons neutral oil over medium high heat. Add the cauliflower and a pinch of salt and cook unstirring, for 3 to 4 minutes until charred. Flip the florets and continue cooking for 2 minutes.
  4. Add the bell peppers, white onion, a pinch of salt and the remaining 1 tablespoon oil and cook 4 to 6 minutes until tender.
  5. Turn off the heat. Pour in the sauce and add the green onions. Stir until the sauce coats everything and thickens. Serve immediately.

Here’s the ideal healthy breakfast recipe, easy and full of irresistible flavor. In fact, we’re head over heels for it: Banana baked oatmeal! This incredible recipe is wholesome and filling, and it’s made with good-for-you ingredients: mostly oats and bananas. It happens to be a vegan baked oatmeal, but it pleases absolutely everyone. Serve it for guests or even better, make up a big pan and eat off of it all week! You can cut it into “bars” for quick snacks, too. Topped with a little nut butter and banana slices, it’s a decadently wholesome treat.

A few ripe bananas on our counter inspired this recipe. What to make with ripe bananas? Most recipes are banana bread or banana muffins…in short, treat food! We wanted something wholesome that would work for a meal. So we opted for a banana-based vegan spin on our healthy baked oatmeal. My, did it turn out delicious! It quickly skyrocketed to the top of our favorite easy breakfast recipes. The ingredients for banana baked oatmeal are:

  • Rolled or old fashioned oats: Do not substitute steel cut oats, as they have a much different texture! Instead, go to Baked Steel Cut Oatmeal.
  • Ripe bananas: Make sure they are very ripe! It is crucial for this recipe.
  • Pecan pieces or other nuts like walnuts or almonds
  • Cinnamon, allspice, and vanilla
  • Baking powder
  • Milk (your preferred dairy free milk)
  • Maple syrup

Banana substitutes for egg (and makes it vegan)

Here’s the fun thing: typically a baked oatmeal recipe calls for egg to help bind together the texture. But when you use mashed bananas, they act as a binder! In fact, banana is a common vegan substitute for egg in baking recipes. You can use this formula in other baked goods: substitute 1 mashed ripe banana for 1 egg.

The other thing mashed banana does here: it adds big banana flavor! So it doesn’t matter your dietary preferences. This banana baked oatmeal is full of beautiful sweet banana flavor and it makes for the perfect texture.

Types of milk for baked oatmeal

You can use any type of milk you like for this recipe! If you want to make it a fully vegan baked oatmeal, use your favorite plant based milk. Here are some options:

  • Oat milk: Oat milk is becoming a popular and easy to find non dairy milk. Make sure to use unsweetened and unflavored.
  • Almond milk: Almond milk is another popular choice.
  • 2% milk: If you don’t care about being fully vegan, use 2%.
  • Avoid coconut milk, as it can add strong coconut flavor. Soy milk is an option, but we don’t often use it in our cooking.

Toppings for banana baked oatmeal

There are lots of ways to top baked oatmeal! This banana baked oatmeal is a pretty darn healthy breakfast: it’s vegan, oil free and relatively low sugar. So we like to keep our toppings wholesome too! Here’s how we topped it, and a few more ideas:

  • Nut butter and bananas: Swirl together almond butter and peanut butter, then top with banana slices. Use sunflower butter for nut free.
  • Maple syrup: A tiny drizzle of maple syrup is all you need for a little sparkle.
  • Blueberry compote: Try topping with blueberry compote (also vegan).
  • PB&J: Why not add a swirl of peanut butter and strawberry jam?

Make ahead instructions for baked oatmeal

Keep in mind for this vegan baked oatmeal recipe: there’s not really a good make-ahead option. Do not make the entire pan in advance and refrigerate overnight! Overnight oats call for this, but don’t try it here. The problem? The oats will absorb all the liquid and be much too dry. Here are two make-ahead options:

  • Minimal prep: You can mix up the wets and dries separately and store in separate containers (with the wets refrigerated), then pour them together in the morning and bake. It still takes 45 minutes to bake. We prefer this option…
  • Bake in advance: Make up a pan on a Sunday night, then refrigerate it for eating off of throughout the week. You can refrigerate leftovers for up to 1 week, and re-warm them in a 300 degree oven or the microwave. Or, just eat them right out of the fridge like we do!

Ingredients

  • 2 cups rolled oats
  • 1/2 cup pecan pieces (optional)
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon kosher salt
  • 3/4 cup mashed banana or 2 very ripe bananas
  • 1 3/4 cups milk of choice (dairy, almond or oat)
  • 1/4 cup pure maple syrup
  • 1 tablespoon pure vanilla extract
  • For serving: Banana slices, almond butter or peanut butter

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.*
  2. Butter an 8 x 8″ or 9 x 9″ pan. In a medium bowl, mix together the rolled oats, pecan pieces, baking powder, cinnamon, allspice, and kosher salt.
  3. Dump the dries into the prepared pan. 
  4. Mash the bananas. In the same bowl, whisk together the bananas, milk, maple syrup, and vanilla. Drizzle the milk mixture over the oats. Stir lightly with a fork to make everything gets evenly incorporated.
  5. Bake 40 to 45 minutes until the top is nicely golden and the oat mixture has set. Remove from the oven and allow to cool for about 10 minutes.
  6. Before serving, spread the top with almond butter or peanut butter (or a combination) and top with banana slices. Store leftovers refrigerated for up to 1 week: reheat in a 300 degree oven or microwave until warm.
